ANALISIS PERBANDINGAN KADAR AKRILAMIDA PADA PRODUK OLAHAN AYAM BERBUMBU DAN TIDAK BERBUMBU HASIL PEMBAKARAN MENGGUNAKAN METODE KROMATOGRAFI CAIR KINERJA TINGGI (KCKT)

Senyawa akrilamida diketahui dapat muncul pada pangan yang diproses pada temperatur tinggi akibat terjadinya reaksi Maillard, yang melibatkan interaksi antara asam amino asparagin dengan gula pereduksi. Senyawa ini menjadi perhatian karena bersifat neurotoksik, genotoksik, dan berpotensi karsinogenik. Penelitian ini bertujuan membandingkan kadar akrilamida pada ayam bakar berbumbu dan tanpa bumbu menggunakan metode Kromatografi Cair Kinerja Tinggi (KCKT). Sampel yang digunakan berupa tiga bagian dada ayam dengan tiga kali ulangan analisis. Ayam bakar berbumbu dimarinasi menggunakan bawang merah, bawang putih, jahe, lengkuas, garam, dan kecap, sedangkan sampel tanpa bumbu dibakar tanpa marinasi. Metode analisis divalidasi melalui uji linearitas, presisi, akurasi, batas deteksi (LOD), dan batas kuantifikasi (LOQ). Hasil validasi menunjukkan metode memenuhi kriteria dengan nilai koefisien determinasi (R²) sebesar 0,9996, presisi (%RSD) 0,370%, akurasi (% recovery) 85,63–108,34%, LOD 0,121 ppm, dan LOQ 0,367 ppm. Hasil analisis menunjukkan kadar akrilamida pada ayam bakar tanpa bumbu sebesar 7,12 ppm dan ayam bakar berbumbu sebesar 15,80 ppm. Kadar yang lebih tinggi pada ayam bakar berbumbu diduga berkaitan dengan penambahan kecap yang mengandung gula pereduksi sehingga berpotensi meningkatkan pembentukan akrilamida selama pembakaran. Secara deskriptif, penggunaan bumbu marinasi yang disertai kecap tidak menunjukkan penurunan kadar akrilamida pada ayam bakar. Kadar akrilamida pada kedua sampel melebihi batas acuan FDA sebesar 2 ppm sehingga menjadi perhatian dalam aspek keamanan pangan.
