Abstract

Post-harvest handling of chicken farms is one aspect that plays a very large role in determining the quality of chicken meat.  Meat products should meet the requirements of the ASUH standard (Safe, Healthy, Whole and Halal) so that good quality meat/carcass will be obtained.  The real conditions in society regarding the provision of chicken meat are still worrying.  For example, there are still chickens circulating that are slaughtered in a non-halal manner, and meat that is injected with water to increase the weight of the carcass.  This condition makes it urgent that post-harvest handling of chickens needs to be considered, to produce ASUH products.  The objectives of this literature review include: 1) to examine the factors that influence the quality of chicken carcasses; 2) to understand post-harvest handling of chickens both pre-slaughter and post-slaughter.  Based on the literature review, it was found that the factors that influence the quality of chicken carcasses are strain, gender, management system, slaughter age, pre-slaughter treatment, and post-slaughter.  The conclusion of this literature review is that to obtain a ASUH product, it is necessary to pay attention to and improve chicken post-harvest activities, including catching, transportation, pre-slaughter, slaughter, and post-slaughter activities.  Slaughtering in an Islamic way and without stunning is the best and right step to produce a ASUH product.
